Chia Pudding: An invigorating breakfast from the night before

What is chia pudding? A very invigorating breakfast that we can prepare from the night before!

I have said this a million times. I’m not the best cook in the world, but I really like experimenting with breakfast foods! That’s why at you can find ideas for colorful, delicious and fruity breakfasts.

The backstory :

This time, I tried to make a pudding from chia seeds. In Europe this breakfast is very popular for two reasons: 1. You can prepare it from the night before and 2. It’s very nutritiously dense.

And it’s true! You prepare it in the evening, put it in the fridge and perfect it in the morning! You can even take it with you to work, school or to your morning walk and consume it whenever you want! Of course, with a metal or wooden spoon.


Chia seeds when mixed with liquid (water, milk or yogurt) release a slime and that is where all the nutrients are hidden. This slime is does wonders for the bones and the digestive system. At the same time, chia seeds are rich in omega-3s, calcium, magnesium, vitamin C and iron.

You will need :
  • 1 cup plant based milk
  • 2 tablespoons of chia seeds
  • 1 teaspoon of honey or agave syrup

This is the basis for a chia pudding. To these ingredients, you can add whatever flavor we want: cocoa, cinnamon, ginger, matcha, etc. For this recipe, I added 1 teaspoon of matcha.

I put all the ingredients in a jar and mixed them well with a spoon. I put the jar in the fridge and left it there overnight. You can leave the mixture in the refrigerator for 4 to 20 hours to prepare. This time is needed for the chia seeds to swell and their slime to come out.

The next morning I added the rest of the ingredients :
  • 2 tablespoons of grated pistachio
  • 2 tablespoons of Greek pumpkin seeds
  • 1 sliced banana
  • 2 tablespoons of grapes
  • 2 figs
  • 2 tablespoons of coconut flakes

I mixed the ingredients and enjoyed my nutritious breakfast!

So the plan is : The night before, add the milk and seeds in a jar and mix for 20 seconds. The next morning : garnish and enjoy. Total preparation time : 15 minutes.

And if it isn’t convenient to eat it from the jar, you can transfer it to a glass bowl!
